Thanksgiving is Thursday, November 26 this year, and if dinner is at your house, the countdown is already running. The cooking isn't really the hard part. The hard part is that everything needs the oven at once, the gravy needs to happen in the ten minutes nobody planned for, and the kitchen looks like a storm went through by the time the pie comes out.

This guide is the short list of gear that solves those specific problems, plus a week-of plan that keeps the day calm. Nothing here is a gadget you'll use once. Every pick earns a spot in the cabinet the other 364 days too.

The week-of plan

  • Sunday or Monday: move a frozen turkey to the fridge if it's big. A 20-pound bird needs four to five days to thaw in the refrigerator.
  • Tuesday: shop for the last fresh items, clear out the fridge and wash the serving dishes you only use once a year.
  • Wednesday: make pie, cranberry sauce and anything that reheats well. Chop vegetables and set the table.
  • Thursday morning: turkey in the oven first. Sides go in while it rests.
  • Thursday night: leftovers packed, dishwasher running, floors spot-cleaned.

1. Roast the turkey

Cuisinart Chef's Classic 16-inch roasting pan with rack

A disposable foil pan is tempting, but it flexes when you lift a hot, heavy bird and it can't go on a burner for gravy. A real roasting pan fixes both. The Cuisinart 16-inch roaster is stainless steel, comes with a rack that lifts the turkey out of its drippings, and has upright handles you can grab with oven mitts.

What to know: measure your oven before you buy any roaster this size, and check the listing for the largest bird it holds.

Roasting pan

Cuisinart Chef's Classic 16-inch Roasting Pan with Rack (7117-16UR)

Best for: turkeys and large roasts, then gravy right in the pan on the stovetop.

TempPro TempSwift TP19H instant-read thermometer

Pop-up timers and "15 minutes a pound" are guesses. An instant-read thermometer is how you know. Check the breast, the inner thigh and the wing, all away from bone. A fast reading means the oven door is open for seconds, not minutes.

Instant-read thermometer

ThermoPro TempPro TempSwift TP19H Instant-Read Thermometer

Best for: checking the turkey in three places without losing oven heat.

If the cook in your family wants to watch the temperature from the couch, our grilling gifts guide covers a wireless probe that stays in the bird.

2. Make the gravy

OXO Good Grips fat separator (4-cup)

Pan drippings are the best part of the gravy and also mostly fat. A fat separator lets the fat float to the top and pours the good stuff out from the bottom. The OXO has a strainer on top to catch bits and a stopper so fat doesn't sneak into the spout.

Gravy separator

OXO Good Grips 4-Cup Fat Separator

Best for: smooth, not-greasy gravy in the last ten minutes before dinner.

3. Cook and stage the sides

Nordic Ware Naturals half sheet pan

Half sheets are the workhorse of the day: roasted vegetables, rolls, sweet potatoes, cookies, and a place to stage everything that's waiting for the oven. Plain aluminum heats evenly and won't warp as easily as thin pans. Most families can use two or three.

Sheet pan

Best for: roasted vegetables, rolls and staging dishes on the counter.

Lodge 6-quart enameled Dutch oven

Mashed potatoes, stuffing, a batch of soup for the day after: a heavy enameled Dutch oven holds heat for a long time, so food stays warm while you finish everything else. It moves from stovetop to oven to table.

Dutch oven

Lodge 6 Quart Enameled Cast Iron Dutch Oven

Best for: mashed potatoes, stuffing and anything that needs to stay warm in the pot.

4. Keep it all hot

Elite Gourmet dual buffet server

Oven space runs out about an hour before dinner. A plug-in buffet server with two warming trays takes two sides out of the oven line and holds them hot on the counter, so guests can serve themselves while you carve.

What to know: keep the cord away from the edge of the counter and out of the walkway, and don't run several heating appliances on one outlet.

Food warmer

Elite Gourmet Dual Buffet Server & Food Warmer (EWM-6122)

Best for: buffet-style dinners and freeing up oven space.

Food safety tip: hot food should stay hot (140°F or above). Don't leave dishes sitting out for more than two hours.

5. Pack the leftovers

Pyrex Simply Store glass containers

Leftover plates for guests and a fridge full of turkey sandwiches both need containers with lids that fit. Glass goes from fridge to microwave and doesn't stain from cranberry sauce or gravy. A set with mixed sizes covers the whole meal.

Leftover storage

Best for: leftovers, take-home plates and the week of turkey sandwiches.

Leftovers are best eaten within three to four days, according to the USDA. Freeze what you won't get to.

6. Clean up fast

The trick to a clean kitchen at the end of the night is to start before dinner.

  • Empty the dishwasher in the morning so it's ready for dirty dishes all day.
  • Fill one sink with hot soapy water for pans as they come out of the oven.
  • Line the trash with a fresh bag before guests arrive, and have a spare ready.
  • Soak the roasting pan right after the gravy is done. Don't let it sit overnight.
  • Wipe counters with microfiber cloths as you go. Our holiday cleaning game plan covers the before-guests clean.

FOLEX carpet spot remover

Gravy, wine and cranberry sauce always find the one light carpet in the house. Keep a spray spot remover under the sink so you can blot it right away rather than finding a set stain on Friday. Test it on a hidden spot first, as with any carpet cleaner.

Carpet spot remover

FOLEX Instant Carpet Spot Remover (32 oz)

Best for: fast spill cleanup on carpet and rugs during the party.

If you have pets or kids, or a big crowd coming, a portable spot cleaner like the BISSELL Little Green in our cleaning guide handles the bigger messes.
